This is one of the stuff that's easy to pull out at basic level, but hard to master if you really want to behave organic as in the references video.
Also, many ways to approach it (both with PhysX and without), so a straight - forward answer is not really easy.
My advice is to first determine camera angles, and how close or far is viewed, then decide of approach.
